Brownies in the New Year
With the start of the new year comes new resolutions and new beginnings. I, for one, began 2022 with my usual list of things I wanted to stick to and learn throughout the year. On the top of my list, as it always is, was the goal to “eat healthy foods and exercise.” I started January with my list in hand and started making an effort to stick to my goals. However, halfway through the month, I started missing all my comfort dishes and began looking for ways to make my favorite foods a bit healthier. After various attempts at making nutritious desserts (spoiler: they all didn’t all taste that great!), I found a couple of recipes that I decided were keepers. One of my favorite cheat foods was chocolate brownies, and while searching for the tastiest version of the recipe, I found an amazing, vegan, healthy food blog called Chocolate Covered Katie. If you are a fan of vegan cooking, you may have heard of her delicious recipes, which range from dinner ideas to healthy twists on popular desserts. This specific recipe involves black beans and chocolate. Although it sounds like a strange pairing, the ingredients create a wonderful moist chocolatey brownie, which frankly, I can’t get enough of. Also, this recipe does not contain any flour! Instead, it uses oats, making this recipe gluten-free. I have made this recipe a couple of times and have a few tips for those who want to try it.
1. Make sure you follow the full baking time.
Sometimes while making this recipe, I would take out the brownies a minute or two before
needed. If you do this, the brownies in the center will still be soft and uncooked. Alternatively,
overcooking will make the brownies chewy.
2. For a firmer feel, place the brownies in a fridge.
Refrigerating or freezing the brownies will make the soft brownies firm up.
